• 250g Butter 🧈
• 80g Powdered Sugar
• 80g Coconut Cream 🥥
• 2g Vanilla Extract
• 2tsp Pandan Extract
• 60g Corn Starch
• 2g Salt 🧂
• 250g All Purpose Flour
• 1 egg 🥚
• 1 tsp green food colouring
For toppings:
• 2 tbsp minced gula melaka
• 2 tbsp coconut flakes
Preparation
1. Preheat the oven to 150°C (350°F) and line a baking tray with parchment paper.
2. In a mixing bowl, cream together the softened butter until smooth using a spatula.
3. Gradually sift in the powdered sugar, corn starch, and flour into the butter mixture, mixing well after each addition until fully combined.
4. Add the eggs and salt to the mixture, stirring until incorporated. Then, add the coconut cream, vanilla extract, pandan extract, and green food colouring (if using), mixing until the dough is evenly coloured and well combined.
5. Carefully fold in any remaining ingredients until evenly distributed throughout the dough.
6. Fit a piping bag with a large star piping tip and fill it with the dough. Pipe the dough onto the prepared baking tray, forming individual cookie shapes.
7. Sprinkle minced gula melaka and coconut flakes on top of each cookie.
8. Bake in the preheated oven for approximately 25 minutes, or until the edges of the cookies are light brown.
9. Once baked, remove the cookies from the oven and transfer them to a wire rack to cool completely.
